GUI testing - how and how much

Hi all,

I am about to test the GUI of a large web based application. The applcation has a main menu across the top and each menu item has a sub-menu. Each sub-menu may have another submenu and so on. A form is displayed in the main frame upon menu item selection and fields need to be validated. Some fields are mandatory, others are not.

I tried creating test cases for each submenu and each form with different field values for a very similar application some time ago, and ended up with a 150 page document, which was hard to use and maintain. This time I will have each test case in a separate small document.

The obvious approach would be to go through all menus, their sub-menus and the sub-sub-menus, and all their forms with fields, then test Submit/Cancel buttons and check what's gone in the database.
The volume of it seems intimidating.
Is there a clever way of testing multi-item menus and sub-menus so that I don't lose myself in all of it? How do I know I've tested enough possible combinations of menu item selection sequences?
