Re: testing / Project Management tools in Mac platform
The company I work for (Redstone Software) sells Eggplant, a commercial software test automation tool that runs natively on Mac OS X, which can also test software on other platforms. This makes it ideally suited to validating a port from Windows, as you can write scripts that drive the Windows version of your app, and then reuse the same scripts to validate that the Mac version works the same way.
I'm not intimately familiar with the freeware tools that are out there, but I expect that at least some of them will run on a Mac, since Mac OS X is fundamentally Unix underneath. Keep in mind, of course, that you generally get what you pay for -- using freeware has its own costs, as it's likely to take more of your time and effort, with less support available.
As for checklists and best practices, you may want to look around at some of the other forums here. What you want to test and look for in a Mac application won't be fundamentally different from what you'd look for in applications on other platforms.
