Using a different DataTable than the default
I'm using Quick Test 9.5 and I was curious if there is any way to make a parameterized checkpoint read the value it's looking for from a different DataTable from the default one (Default.xls). Thanks!

Yes. why not.
Don't use QTP's parameterization mechanism.
Instead: make variables for the values you need to check and compare,
read actual value of field from your application using GetROProperty(),
read expected value from whatever external AnyName.xls you dedicate for this task.
Something like that [Pseudo code]:
Import your Excel in the code
[or associate it using QTP's mechanizm: File-->Settings-->Resources]
ValueOfFieldFromApplication = "someValueThatYouReadFromApplication"
ValueFromDataTable = DataTable("xxx",SheetName)
If ValueOfFieldFromApplication = ValueFromDataTable Then
' Your checkpoint passed
