How does one get the current date and time?
I've got an app. that I need to set a job to run in X minutes from now. SO I need the current time, to tell it to run the job at current + 5 minutes, or something like that..

get_time() returns current time in seconds since some arbitrary start time.
time_str() with no arguments returns the current time in a human readable format.
If you go to the Mercury support site and browse the user uploads section, look for the date/time functions uploaded by Jordan Gottleib for a number of useful function for manipulating date/time values. (He and I worked on these together.)
