During playback what data is cached? According to online docs only graphical files are cached, but some people in our office think that other objects are cached as well. If any one can answer I would be most grateful.

The whole page is saved in cache just like a browser cache, however most web pages have a setting that allows you to specify whether to use the cache or check for newer page on the client side, that can force the main page to be retrieved every time, but doesnt ussualy effect the images. Also if the page is being updated every time a request for it is made, it will show as being a newer version and will download the page again, accept for the images. Basically it works just like the cache setting in most browsers. So yes the cache is the whole page not just the images, but in allot of cases the images are the only items being retrieved from cache.
