Anyone have any input on what good job titles are for people that spend the majority of their time doing manual software testing (using test cases written by others) and then writing bugs found during testing?
Insanity: doing the same thing over and over again and expecting different results
Though inaccurate I've often seen QA Analyst, if it is just manual testing and bug documentation QC Analyst may be more accurate.
Why not "Tester" or "Software Tester"

You should ask your HR Manager.
Often the titles given in a company would be coordinated by them, and would match up with locally-applicable titles within your industry.
That said, I'd probably call them "Tester".

We use variations of "test technician" and "test lead."
