Per my knowledge, as part of backend testing, we do Database testing. And sometimes, if need be - like, we want to localize an error, then we do internal data flow testing and identify where exactly the error is.
These are the two scenarios where I found a need to do backend testing.

Backend testing for me, is testing the batch that goes on behind the scene. This may include End of Day, End of Week, End of Year, certain types of back-up and restore. Stretching a little it may also include data conversion.
It could also refer to testing a middleware when one is used.
Depends on the interface, but in general I would look at anything that is done behind the scenes as backend testing. If I checked an interface by verifying data through a GUI I would not call it backend testing. If there were interfaces in overnight processing into another application that I had to verify through reports or be checking files I would call backend testing.
