No. I just believe its claim that - as a screen-scraper - it can test anything that has a GUI.
But with that said, I don't really know much about your app, and if you want to test some sort of underlying layer, Eggplant may not help you.
I believe that Watir, Quick Test Pro, VBScript, etc. can drive a word doc. just fine...

QTP doesn't support my application.
You may want a combination of VBScript + User Simulation + Screen Image Recognition. VBScript is great for automating standard Word stuff. But you may need a bit more than that to control custom forms if you want to do it at the user level.
