Is there any automation tool that can be used to test the PC to PC calls (VOIP) and can record the conversation between the two party to check the sound quality?

If this isn't for testing large deployments or Empirix products are too costly, you can try this type of solution:
Use GUI automation to control (PC-to-PC) softphones. For X-Lite/eyeBeam, their is a sample solution here:
X-Lite automation API (unofficial)
Use third-party software to record the audio between the phones. Examples would be:
Virtual Audio Cable
Or if the softphone has the option, use its call recording feature to record the audio to file.
